Strawberry Short Pie
Strawberry season is among us, and you may have found yourself in a position of coming up with ideas of how to use your strawberries. Well, I have a solution for you. Make some strawberry pie! This is the best strawberry pie you’ll ever eat! It’s been a staple in my family for many years. It got a sweet strawberry filling and a delicious shortbread crust. It’s almost like eating a strawberry shortcake, but in a pie version. You won’t be disappointed!

- Preheat the oven to 400° F.
- To make the crust, blend the biscuit mix and butter in a small bowl, using a fork. Add the boiling water and stir until the dough forms a ball and comes away from the sides of the bowl. Add more biscuit mix if your dough is too soft to form a crust. Dough should be fluffy and soft.
- Press the dough into a pie pan. Bake for 8-10 minute or until the crust starts to turn a light golden brown
- To make the glaze, combine 1 cup of finely chopped strawberries and 2/3 cup water in a large saucepan. Bring to a boil. Then reduce the heat and simmer for about 3 minutes until the fruit starts to break up.
- In a separate bowl, combine the remaining 1/3 cup water, sugar, and cornstarch. Add this to the boiling mixture once the fruit has begun to break up. Boil the mixture for about 1 minute, until it has thickened. Remove from the heat and allow to cool for at least 30 minutes.
- Once the crust is cool, fill it with the remaining fresh sliced strawberries. Pour the glaze over the strawberries and refrigerate the pie uncovered for about 3-4 hours until firm. Then cover with plastic wrap.
